SGO Tip Tuesday: Eleventh Hour #EEEEEATS
If you're like me and just found out that you're expected to bring an appetizer to Thursday's family celebrations, here are three easy last minute recipes that are to die for (plus a cocktail recipe for good measure)!
1. Festive Feta dip

You'll need: About 1/3 cup olive oil 3 Roma tomatoes, seeded and diced 4-5 green onions, sliced thinly 8 ounces feta cheese, crumbled 2-3 teaspoons Cavender's Greek seasoning Fresh baguette, sliced thinly (or crackers, or tortilla chips) Optional: balsamic vinegar
-Start with a layer of olive oil on a platter for serving
-Dice up your tomatoes and slice your green onions
-Add tomatoes, green onions and feta to your platter
-Add Cavender's Greek Seasoning (aka crack)
-Mix thoroughly and serve with a toasted, sliced baguette!
2. Maple Roasted Brussels Sprouts
I made a batch of these bad boys once to take to my boyfriend's parent's house for Thanksgiving and they were such a hit! They really are a great last minute fix.

2 lbs Brussels Sprouts, trimmed
1/2 cup EEOO
6 tbsp pure maple syrup
8 slices of bacon
1 tsp salt
1/2 tsp pepper
-Set oven to 400 degrees -Place Brussels sprouts in a single layer in a baking dish. Drizzle with olive oil and maple syrup; toss to coat. Sprinkle with bacon; season with salt and black pepper. -Roast in the preheated oven until bacon is crispy and Brussels sprouts are caramelized, 45 minutes, stirring halfway through.
-Taste-test and add salt and pepper as needed -Serve and enjoy!
3. Swiss Chard Salad This salad may be described as a "summery" side, but will be a light and refreshing compliment to the many heartier sides your relatives will surely bring to the table this Thanksgiving! Visit Popsugar for the full recipe.
You'll need: 1 bunch Swiss chard 1/2 cup extra virgin olive oil, divided 1 1/2 cup fresh breadcrumbs* 1 clove garlic, minced Sea salt to taste Crushed red pepper flakes, optional 1 lemon 3/4 cups grated Parmesan, Grana Padano or Pecorino

4. Cranberry Ginger Fizz Cocktail

You'll need: 3/4 cup sugar 3/4 cup water 1 cup fresh cranberries 1 lemon, cut into wedges 1/2 orange, cut into slices 1 1/2 cups dry gin - Bombay Sapphire, Beefeater or Tangueray suggested 1 cup chilled Ginger Ale (or Ginger Beer for a more pronounced ginger flavor) 4 mint sprigs
